Ingredients
1 ripe avocado
1 cup cooked quinoa
½ cup cooked black beans
½ red pepper diced
¼ cup red onion, diced
¼ cup cilantro, chopped

Dressing
1 lime, juiced
2 Tbsp olive oil
2 tsp maple syrup
1 tsp Dijon mustard
Pinch of cumin
Salt and pepper, to taste

Cut avocado in half, remove pit and scoop out the flesh in one piece.
Mix together salad ingredients, whisk dressing, and combine. Fill avocado halves.
